Our organic pine nuts grow under the southern Italian sun on the slopes of Mount Etna - on nutritious volcanic soil. Pine nuts aren't easy to get - the process is very labour and time-intensive.
It takes between 15 and 25 years for pine trees to start producing seeds and triple that time to reach top production. Once the cones fall, we gently take them apart to reveal the nuts before polishing away the fine skin around the kernels. The last step is to carefully hand-sort the kernels for quality.
Pine nuts are a great source of vitamin B2, B3 and potassium and the highest source of selenium of all known foods!
They're also a great source of protein, iron and magnesium, as well as antioxidants that can fight to age and contribute to healthy skin and protect the body from an imbalance of free radicals and antioxidants.
Pine nuts are the secret ingredient behind delicious pesto, made by blending them with olive oil, basil, and a touch of parmesan. But they're also delicious in cakes and tarts, or lightly toasted in the oven, then sprinkled on top of soups and salads.
